Chocolate Dipped Cookies

Chocolate! Need I say more? I was craving chocolate and cookies, so I decided to combine the two with these delicious chocolate dipped chocolate chip cookies.  You know it has to be amazing if the word “chocolate” is in the name twice.  Double the chocolaty goodness! I have tried in the past to simply dip my favorite chocolate chip cookie in chocolate, but the texture wasn’t quite right to support that lovely layer of chocolate.  I redesigned the recipe so that it now holds up perfectly and is delicious when dipped, but wouldn’t be my favorite cookie without the chocolate dip.  In other words…make sure you add that layer of chocolate! You don’t want chocolate chip cookies (boring).  You want chocolate dipped chocolate chip cookies!

STEP ONE: Whisk Dry Ingredients

Pre-heat oven to 350.  In a medium bowl, whisk flour, baking soda, and salt until well combined.

STEP TWO: Make Batter

Beat butter and sugar at medium speed for one minute or until well combined.  Add egg and vanilla and beat an additional 30 seconds. Add dry ingredients and beat on low until well combined, scraping down the sides as necessary. Stir in chocolate chips.

STEP FOUR: Roll and Bake

Roll heaping tablespoons of dough into balls and place on parchment lined cookie sheet.  Bake 12-16 minutes (14 minutes was perfect for my oven), or until slightly brown and set around the edges. Cool five minutes on cookie sheet, then remove from cookie sheet and cool completely.

STEP FIVE: Add More Chocolate

In a microwave safe bowl, add 1 cup of chocolate chips and 2 tablespoons of shortening.  Microwave in 30 second increments, stirring with fork every 30 seconds, until melted and smooth.  Dip cooled cookies in chocolate mixture and set aside on parchment paper lined plate to set. You could also decorate your cookies with even more toppings at this point, such as sprinkles or M&Ms.  I used a little bit of melted white chocolate. If you have room in your refrigerator, you can place the cookies there for about an hour to set up even quicker.  Just be sure to not overlap them or they will stick together.

STEP SIX: Enjoy!

Ingredients

    For the Cookies
  1. 2 1/4 cups flour
  2. 3/4 teaspoon baking soda

  4. 12 tablespoons butter,melted
  5. 1 cup brown sugar
  6. 1/2 cup white sugar
  7. 2 eggs
  8. 1 teaspoon vanilla
  9. 1 1/2 cups chocolate chips
  10. For the Chocolate Dip
  11. 1 cup chocolate chips
  12. 2 tablespoons shortening
