Fall Salad

It has been a few weeks since I’ve had a chance to post.  Life just gets crazy sometimes.  At least I’m back for my favorite season. Fall. I love everything about fall.  The crisp, cool weather, getting to wear boots and sweaters, and most of all the homey, comfort food that fills the home with warmth and wonderful scents.  Unfortunately, even though the calendar says that it’s officially fall, it still feels like summer in California.  I’m longing for a pumpkin spice latte, but as I write this, it’s over 90 degrees outside – not quite the right weather to enjoy a hot beverage.  Due to the hot weather, I decided to make a fall dish that wouldn’t heat up my kitchen but still allow me to enjoy some of the flavors of fall.  This fall salad is the perfect accompaniment to any meal.  You can serve it with just about anything and it looks pretty too.

STEP ONE: Add Spring Mix to a Pretty Bowl

STEP TWO: Line Edges of Bowl

Arrange sliced cucumbers around the edges of the bowl, followed by the grape tomatoes, and finally the chopped green apple.

STEP THREE: Add Toppings

Top entire salad with mozzarella, walnuts, and dried cranberries.

Fall Salad

Fall Salad

This fall salad is the perfect accompaniment to any meal. I love the flavors of apple, walnut, and cranberry that burst in your mouth! You can serve it with just about anything and it looks pretty too!

Ingredients

  1. 1/2 pound spring mix salad
  2. 1 cucumber, sliced
  3. 1 pint grape tomatoes
  4. 1/2 granny smith apple, finely diced
  5. 1/4 cup shredded mozzarella cheese
  6. 1/4 cup chopped, glazed walnuts
  7. 1/4 cup dried cranberries

Instructions

    STEP ONE:
  • Add spring mix to a bowl
  • STEP TWO:
  • Arrange sliced cucumbers around the edges of the bowl, followed by the grape tomatoes, and finally the chopped green apple.
  • STEP THREE:
  • Top entire salad with mozzarella, walnuts, and dried cranberries.
