Flaky Breakfast Cups

Mornings tend to be a little rushed at our home, and as much as I love the idea of our whole family sitting around the table eating pancakes and drinking coffee together, it’s just not reality.  Usually, my husband eats his breakfast on the way to work.  He loves these breakfast burritos! I wanted to create something a little different for him to eat on the go, and that is how this recipe was born.  There are so many ways you could use these breakfast cups.  They work great for on-the-go eating, but also would be amazing for entertaining at brunch.  What’s great about these delicious little things is that they are completely customize-able.  You could easily swap out the potato for sauteed veggies or substitute diced ham for the sausage.  Get creative and discover your favorite combination.

STEP ONE: Prep Puff Pastry

Pre heat oven to 350.  Coat a 12 cup muffin tin with baking spray.  Cut each sheet of thawed puff pastry into six equal sections.  Usually, the pastry comes folded in thirds so you can just cut along the fold lines and then cut in half to get six pieces.  Easy! Line each tin with a piece of puff pastry.

 

STEP TWO: Cook the Sausage

In a large skillet, cook sausage over medium heat until browned and cooked all the way through.

STEP THREE: Make Egg Mixture

With a fork, whisk together eggs, flour, baking soda, and cheese.

STEP FOUR: Assemble

Spoon a heaping teaspoon of sausage into each cup. Follow with one crumbled tater tot per cup (if your tater tots are still frozen, you can easily defrost them by microwaving them about one minute). Top each cup with two tablespoons of the egg-cheese mixture.

Bake 25-30 minutes or until the puff pastry is golden brown.

Flaky Breakfast Cups

Puff pastry cups filled with eggs, potatoes,sausage, and cheese! Delicious, elegant, and portable!

Ingredients

  1. 2 sheets frozen puff pastry (thawed)
  2. Baking spray
  3. 1/2 pound sausage (I used chorizo)
  4. 8 eggs
  5. 1/2 teaspoon baking soda
  6. 1/4 cup flour
  7. 1/4 cup melted butter
  8. 2 cups shredded cheese (I used Mexican blend)
  9. Chopped cilantro to garnish (optional)

Instructions

    STEP ONE
