Pictures can’t do this cookie justice. This delicious treat is something that has to be experienced to appreciate the amazing maple-cinnamon-spice flavor. The texture is perfectly soft in the center with a slight crispness on the outside. When you put these babies in the oven, your house will get this amazing aroma that makes you want to curl up with a cup of coffee and devour every last cookie as soon as they come out of the oven. You must taste and see to believe, so let’s get started:
STEP ONE: Cream Butter and Sugars
Pre-heat oven to 375. Beat butter, 1/4 cup white sugar, and brown sugar on medium speed for four minutes or until it gets a light, almost whipped cream texture.
STEP TWO: Whisk Dry Ingredients
In a medium sized bowl, whisk together flour, baking soda, and spices.
STEP THREE: Mix It All Together
Add maple syrup, vanilla, and egg yolk. Beat on medium low speed for one minute. Scrape down the sides of the bowl with a spatula and add flour-spice mixture. Continue to beat on low for one minute. Scrape down the sides of the bowl once more and make sure the flour is fully incorporated.
STEP FOUR: Roll and Bake
Fill bowl with 3/4 cup of sugar. Scoop a tablespoon of the dough and roll it into a ball. Place ball into bowl of sugar and coat well. Place onto parchment paper lined cookie sheet and repeat. These cookies cook up pretty big so it’s best not to place more than six cookies on a cookie sheet at a time. Bake cookies (one cookie sheet at a time) for 12 minutes or until just set around the edges. They should look like this:
Cookies continue to cook while they are cooling on the cookie sheet, so don’t worry if they don’t look like they are completely “done” yet. Allow the cookies to cool on the cookie sheet for ten minutes then remove them to cool completely.
