It has been hot around here lately! I mean fry an egg on the sidewalk hot! It was 108 yesterday, and it’s during times like this I have to remind myself why I love summer. It took me awhile to think of what could be so wonderful about blistering heat, then, I looked over to the kitchen counter and saw beautiful, juicy peaches sitting on my counter. That’s right! Summer is filled with peaches, cherries, watermelon, and all sorts of wonderful fruits. If you are looking for a reason to fall in love with summer again, I have just the recipe for you. These peach cobbler ice cream cups are comforting and refreshing at the same time! Not only do these taste amazing, they also look elegant enough for a fancy dinner party!
STEP ONE: Prepare Puff Pastry
After thawing puff pastry, cut each sheet into six equal pieces. Spray muffin tins with baking spray and place each piece of pastry into a muffin tin. It doesn’t have to be perfect. It will actually look a bit messy but as the dough bakes it will puff up and look really cool.
STEP TWO: Make Topping
Mix flour, white sugar, brown sugar, cinnamon, and salt in a medium bowl. Cut in butter by rubbing it into the sugar mixture, with your fingers, until the butter is the size of small pebbles.
STEP THREE: Fill Puff Pastry Cups
Pre-heat oven to 400 degrees. Fill each cup with one tablespoon of peaches, followed by one tablespoon of the topping mixture.
STEP FOUR: Bake
Bake cups 17-20 minutes or until golden brown. Let cool 5 minutes then remove from muffin tin.
STEP FIVE: Top with ice cream and caramel
