I have tried numerous oven roasted potato recipes. The concept seems so simple. Mix potatoes with oil and spices, and throw them in the oven until tender on the inside and crispy on the outside. Easy right? It should be! A lot of the recipes I tried resulted in potatoes stuck to the pan, or that were mushy and flavorless. I was looking for the perfect potato that was crisp on the outside, tender on the inside, full of flavor, and easy to execute. Ladies and gentlemen, I have found that potato. If you follow these simple steps, you too can have these perfect roasted potatoes.
STEP ONE: Prep, Peel, and Dice
Pre-heat oven to 425 and line a baking sheet with parchment paper. Parchment paper is your friend. It is what keeps the potatoes from sticking and makes clean up a breeze. I love you parchment paper. Next, peel potatoes and cut into halves or quarters. My potatoes were from Costco, the land where everything is extra large, so I cut mine into quarters.
STEP TWO: Oil and Season
In a small bowl, mix together the onion powder, garlic powder, oregano, salt, and pepper. In a large bowl, mix together potatoes, oil, and seasoning mix until potatoes are evenly coated. Spread potatoes out onto parchment-lined baking sheet. With two pounds of potatoes, you shouldn’t have a problem over crowding the pan, but after you try these perfect potatoes you will probably want to quadruple the recipe. Just be sure to not overcrowd the potatoes or you might not get that nice, crisp exterior. As long as the potatoes are in a single layer (and not piled on top of each other) you should be fine.
STEP THREE: Bake and Enjoy
Baking time will vary depending on the size of your potato. Usually, the potatoes will roast for 30-45 minutes. Every 15 minutes flip potatoes with spatula and check for doneness.
