This is not your average strawberry shortcake. This one is special because of the amazing creamy filling that goes with the strawberries. This filling features, not only whipped cream, but cream cheese, powdered sugar, and a little bit of sour cream. It’s so good, I think my husband would be happy eating just the filling by itself. It’s that good. This cake is absolutely amazing, tastes delicious, and looks beautiful too. But that’s not the best part. The best part is that this dessert comes together in less than 15 minutes, which makes it perfect for a last minute get together (or a lazy day).
STEP ONE: Slice Strawberries
Thinly slice 2 quarts of strawberries and toss with 1 tablespoon of sugar. Set aside for at least 15 minutes to allow the sugar to draw out the extra moisture; drain.
STEP TWO: Make Filling
Mix powdered sugar and cream on medium low speed for 2 minutes. Increase speed to medium high and mix for another 2 minutes or until soft peaks form. Add cream cheese and sour cream. Make sure the cream cheese is at room temperature and cut into small pieces so that your mixture is not lumpy.
STEP THREE: Slice Angel Food Cake
Slice angel food cake into thirds, horizontally. Try to keep it as even as possible or you may have a leaning tower of cake (speaking from experience).
STEP FOUR: Assemble
Place bottom layer of angel food cake on a pretty cake plate. Add enough strawberries to just cover the cake. Pipe or spoon 1/3 of the filling on top of the strawberries. Repeat with the middle and top layer. Fill center hole with more strawberries and cover with more filling. Place a few extra sliced strawberries on top as a garnish. Done.
